Linux I volunteer as tech support for a small organization. For years we relied on Ubuntu on our desktops, but the users didn't like it when Ubuntu switched to the Unity interface. This article tells about our search for a replacement and why we decided on Xfce running atop Linux Mint.

If you don't like changes that happen in Ubuntu, like xorg.conf removal, menu.lst change, etcetera. Don't use mint, being Ubuntu based those changes trickle down. Since you are also running low cost systems, need solid stability, and long term support, I'd say use the latest stable version of Debian with XFCE.
