I find myself using a number of OSes daily but for the OSes I use most, I have some favorite third party applications that I can't live without. Here are my application lists for Windows, Unix/Linux, Mac OS X and BeOS; applications I always download and install after a clean OS installation. I'm still meddling with Linux on the Desktop - I've always got another dev box at home that I switch over to (with my nifty keyboard/monitor switcher) but I'll admit that there's no apps on the Linux Desktop I need. (currently running SuSe 9.0)
Server side, however, my business absolutely depends upon Linux to function for the hosting of websites, email etc.
