You can achieve the same affect by simply building most of the options as modules. That's what Linux distributions do, since they don't know what kind of machines they'll be running on. If something isn't needed, it isn't loaded.

The risk to kernel compilers comes, for example, from not knowing what kinds of network card they have or what kind of drives they use. That's the level of detail needed.
