I use a combination.

* Emulators - especially for DOS-applications (games, actually, run in DOSBox). Occasionally I'm using Virtual PC - mostly in order to run live CDs without rebooting.

* Real installations - used for Gentoo Linux, Syllable OS, Windows XP and SkyOS.

* Live CDs - used for various *nixes as well as eCS, AROS and a few other systems.
