Instant file / folder forking. Want to try something out on a 15GB video file but don't want to have to copy the file? Fork in with ZFS and only the changes are saved off as a shadow. You can then roll back to the original file instantly or commit to the new one.
In three years time we could be seeing ZFS+FCP all integrated offering super fast non-linear / parallel editing which will add tons of flexibility and speed to video editing.
