a solution looking for a problem. Having a distribution for each architecture is good enough for almost all cases. And certainly for enough that the demand for this feature just isn't there.
I can see one use for fat binaries that multiple distributions don't solve: Hosting /usr on NFS in a heterogenous hardware environment.
