You can also make project-specific VMs, which I do with some regularity.
When the project ends, you just shelve the whole thing. If there is a bug reported, new feature needed, etc, you can go right back to it, even years later, with everything just as you left it.
Of course, you still need some sort of OS and hardware to run your VMs, no matter how thin a layer it is, so you cannot really escape the cycle entirely.
