Aside from the under-the-hood stuff, the GUI is really nice. I actually had fun playing with Longhorn Server. The management console integrates the controls of so many different components into one place that it is like visiting a candy shop. 
One of the largest/best advances is IIS7, and the fact that almost every single piece of it has been rewritten as a pluggable architecture giving developers the ability to A) extend any part of it they want to and B) add new functionality...without having to resort to ISAPI, it can all be done via managed code now.
IIS6 was fantastic from all standpoints (stability, scalability, security)...if IIS7 continues in those areas + what I mentioned above, it'll be a remarkable piece of software.

Longhorn Server is pretty good. They are getting a lot of things right...
